PDF Ebook Genetic Modification and Food Quality: A Down to Earth Analysis, by Robert Blair, Joe M. Regenstein

The development of recombinant DNA methods has changed the face of the food industry over the last 50 years. Crops which have been genetically modified are being cultivated in more and more countries and this process is likely to accelerate as desirable traits are identified and transferred to appropriate organisms, and they are cleared by the regulatory authorities. However, the technique has its critics who claim that modification of the genome of the plant (or animal) in this way may pose unknown and unacceptable risks to the human consumer. Genetic Modification and Food Quality: A Down to Earth Analysis is the first comprehensive text on how GM production methods influence the quality of foods and feeds, based on a complete and unbiased assessment of the scientific findings. It presents a balanced analysis of the benefits and drawbacks of gene-modified food sources in the human diet. Chapters approach the topic with regard to different food types such as cereal grains, oilseed crops, vegetables, fish and animal products. Assessing the nutritive value as well as the health and safety of GMO foods, this book is a reference for anyone working in the food production industry and will also be of an interest to NGOs, trade associations and consumers who are looking for an objective, balanced study of this contentious issue.

Comprehensive Review of GMO Safety and Nutritional Value By Amazon Customer Like all textbooks, the price is a little hard to swallow but at least there is payback with Blair and Regenstein. This is a timely reference text on GMOs that is a must read for anyone wishing to publicly opine on the safety and nutritional value of currently approved genetically modified plants and animals. As is often said, "everyone is allowed their own opinion but not their own facts". There are a lot of facts here that will be useful for the objective student. Although I was familiar with many of the issues and studies referenced in the book, I was impressed with the comprehensiveness and organization of the review. It's also well written.Although I read the book in its entirety, it can also be used as a reference text. Chapters 1 and 2 provide an introduction and a review of global regulations. Chapters 9 and 10 summarize safety and nutrition, respectively. In between (Ch. 3-8), are a lot of details on specific GMOs (cereals, oilseeds, animals, etc.). Chapters 11 and 12 cover consumer issues and conclusions. I think a stand-alone chapter contrasting the differences between selective breeding, mutagenesis, and genetic modification would have been useful. The 3 techniques are mentioned throughout the book, but graphics would have been helpful. Finally, I hope this book embarrasses a few of the more vocal critics of GMOs such as Chipotle's CEO Steve Ellis and Mad Money's Jim Cramer, who still prefer their own "facts".GPS
